Bánh Căn
Small rice pancakes from a mould
Bánh căn are small, round rice pancakes from central and southern Vietnam, baked in a special clay mould with wells.
Classically topped with quail egg, shrimp or squid, they are served with scallion oil and a dip.

- Rice flour200 g
- Cooked rice50 g
- Quail eggs12 pieces
- Shrimp or squid150 g
- Scallion oilsome
- Fish sauce (dip)as desired

Preparation
Blend rice flour with cooked rice and water into a batter.
Heat the clay mould and grease it.
Pour batter into the wells, add egg and seafood.
Bake covered until crisp.
Brush with scallion oil and serve with a dip.
