Small rice pancakes from a mould

Bánh căn are small, round rice pancakes from central and southern Vietnam, baked in a special clay mould with wells.

Classically topped with quail egg, shrimp or squid, they are served with scallion oil and a dip.

Ingredients

  • Rice flour200 g
  • Cooked rice50 g
  • Quail eggs12 pieces
  • Shrimp or squid150 g
  • Scallion oilsome
  • Fish sauce (dip)as desired

Preparation

  1. Blend rice flour with cooked rice and water into a batter.

  2. Heat the clay mould and grease it.

  3. Pour batter into the wells, add egg and seafood.

  4. Bake covered until crisp.

  5. Brush with scallion oil and serve with a dip.
