Square sticky rice cake for the new year

Banh chung is the most important dish of the Vietnamese new year festival Tet and symbolises the earth in its square shape.

Wrapped in banana leaves, sticky rice, mung beans and pork belly are boiled for many hours.

Ingredients

  • Sticky rice500 g
  • Peeled mung beans200 g
  • Pork belly300 g
  • Banana leavesseveral
  • Salt & peppersome of each
  • Kitchen twineas needed

Preparation

  1. Soak the sticky rice and mung beans overnight.

  2. Marinate the pork belly with salt and pepper.

  3. Fold the banana leaves into a square mould.

  4. Layer rice, beans and meat and tie firmly.

  5. Boil in water for about six to eight hours.
