Crab noodle soup from Hải Phòng

Bánh đa cua is the famous specialty of the port city of Hải Phòng: a soup with brown rice ribbon noodles and freshwater crab.

The broth is made from pounded field crabs that give it a deep, savoury sweetness; tomatoes, herbs and crab paste round it out.

Ingredients

  • Brown rice ribbon noodles (bánh đa)300 g
  • Freshwater crab500 g
  • Tomatoes2 pieces
  • Crab paste1 tbsp
  • Spring onion & herbssome of each
  • Fish sauce2 tbsp

Preparation

  1. Pound the crabs, press out with water, strain.

  2. Heat the liquid until the crab meat sets into flakes.

  3. Add tomatoes and crab paste.

  4. Season with fish sauce.

  5. Pour over the soaked noodles, serve with herbs.
