Steamed glutinous rice pyramids with bean filling

Bánh ít are small steamed glutinous rice dumplings, traditionally wrapped into pyramids in banana leaves.

The sweet version is filled with mung bean paste and belongs to festivals and ancestral ceremonies in central Vietnam.

Ingredients

  • Glutinous rice flour250 g
  • Mung beans (split)150 g
  • Sugar60 g
  • Grated coconut50 g
  • Banana leavesfor wrapping
  • Oil & saltsome of each

Preparation

  1. Cook the mung beans soft, work with sugar and coconut into a paste.

  2. Knead the rice flour with warm water into a dough.

  3. Form dough balls and fill with the paste.

  4. Wrap into pyramids in oiled banana leaves.

  5. Steam about 20 minutes and let cool.
