Crispy pancake from Hue

Banh khoai is a small, crispy yellow pancake from the imperial city of Hue, related to banh xeo.

Filled with prawns, pork and sprouts, it is eaten with a special peanut-soy sauce.

  • Rice flour150 g
  • Turmeric1 tsp
  • Prawns & pork belly200 g
  • Bean sprouts150 g
  • Peanut-soy dipto taste
  • Herbs & lettuceto serve

Preparation

  1. Stir a batter of rice flour, turmeric and water.

  2. Fry prawns and pork in the pan.

  3. Pour the batter in thinly and fry crisp.

  4. Top with sprouts and fold over.

  5. Serve with herbs and peanut-soy dip.
