La Paz batchoy comes from the La Paz district of Iloilo and is a hearty noodle soup with pork and offal.

Egg noodles sit in a rich pork broth, crowned with pork belly, liver and crispy crumbled pork cracklings.

  • Fresh egg noodles300 g
  • Pork belly & liver300 g
  • Pork bones (for broth)500 g
  • Garlic4 cloves
  • Spring onion2 stalks
  • Crispy pork cracklingsto garnish

Preparation

  1. Simmer pork bones into a strong broth.

  2. Cook pork belly and liver, slice.

  3. Cook the egg noodles in the broth.

  4. Plate in bowls, top with the meat.

  5. Scatter with garlic, spring onion and cracklings.
