Crispy fried eggplant slices from Bengal

Begun bhaja are Bengali eggplant slices seasoned with turmeric and fried crisp in mustard oil.

As a simple side to rice and dal, they are crisp outside and creamy within.

Ingredients

  • Eggplant1 large
  • Turmeric1 tsp
  • Chili powder1 tsp
  • Rice flour2 tbsp
  • Mustard oil4 tbsp
  • Saltto taste

Preparation

  1. Cut the eggplant into thick slices.

  2. Rub with turmeric, chili and salt.

  3. Lightly coat in rice flour.

  4. Fry crisp on both sides in hot mustard oil.

  5. Drain on paper and serve.
