Steamed rice cake with date palm sugar

Bhapa pitha is a steamed Bengali rice cake made fresh in winter during the pitha season.

Rice flour is filled with grated coconut and date palm sugar (gur) and cooked in small bowls over steam.

  • Rice flour250 g
  • Date palm sugar (gur)100 g
  • Grated coconut100 g
  • Wateras needed
  • Salt1 pinch

Preparation

  1. Lightly moisten the rice flour and pass through a sieve.

  2. Half-fill a small bowl with rice flour.

  3. Place gur and coconut in the centre.

  4. Cover with rice flour and smooth the top.

  5. Steam until the cake is set and turn out.
