Biang Biang Noodles

Hand-pulled belt noodles from Shaanxi

Biang biang mian are extra-wide, hand-pulled noodles from Shaanxi province, whose name mimics the sound of the dough slapping the work surface.

Classically they are topped with chili, garlic and spring onion, then doused with hot oil that blooms the spices.

Ingredients

  • Wheat flour300 g
  • Water & salt150 ml
  • Chili flakes2 tbsp
  • Garlic3 cloves
  • Spring onion2 stalks
  • Soy sauce & black vinegar1 tbsp each
  • Vegetable oil4 tbsp

Preparation

  1. Knead flour, salt and water into a smooth dough, rest.

  2. Divide the dough into strips and pull into wide belts.

  3. Cook the noodles in boiling water.

  4. Top with chili, garlic and spring onion.

  5. Pour over hot oil, mix with soy sauce and vinegar.
