Filipino Christmas rice cake

Bibingka is a baked rice cake of coconut milk and rice flour - especially popular in the Philippines at Christmas after the dawn mass.

Traditionally baked in banana-leaf-lined clay moulds over and under coals, topped with salted egg, cheese and grated coconut.

Ingredients

  • Rice flour250 g
  • Coconut milk300 ml
  • Sugar120 g
  • Baking powder1 tsp
  • Banana leaffor lining
  • Grated coconutto garnish

Preparation

  1. Whisk rice flour, coconut milk, sugar and baking powder smooth.

  2. Line a mould with banana leaf.

  3. Pour in the batter.

  4. Bake golden in the oven.

  5. Serve scattered with grated coconut.
