Filipino sticky rice cake with caramel

Biko is a Filipino sticky rice cake cooked in coconut milk and brown sugar.

A caramelised coconut topping (latik) crowns the sweet cake, served at celebrations.

Ingredients

  • Sticky rice400 g
  • Coconut milk600 ml
  • Brown sugar200 g
  • Pinch of salt1 pinch
  • Pandan leaf1

Preparation

  1. Pre-cook the sticky rice.

  2. Reduce coconut milk with brown sugar and pandan.

  3. Set aside some coconut caramel (latik) for the top.

  4. Stir the sticky rice into the caramel sauce.

  5. Press into a dish and brush with latik.
