Crispy mung bean pancakes

Bindaetteok are savoury Korean pancakes of freshly ground mung beans - a specialty of Seoul's markets.

Fried crisp in plenty of oil with mung bean sprouts, kimchi and spring onions, they are served with a soy-sauce dip.

Ingredients

  • Skinned mung beans (soaked)250 g
  • Mung bean sprouts150 g
  • Ripe kimchi100 g
  • Spring onion2 stalks
  • Soy sauce & vinegar (dip)some of each
  • Oil for fryingplenty

Preparation

  1. Grind the mung beans with a little water into a coarse batter.

  2. Mix in sprouts, chopped kimchi and spring onion.

  3. Spoon portions into hot oil.

  4. Fry crisp on both sides.

  5. Serve with a soy-vinegar dip.
