Candied hawthorn fruit on a stick

Bingtanghulu are glossy, candied fruits on a stick - a classic winter street snack of northern China, especially Beijing.

The tart hawthorn berries are threaded onto skewers and dipped in hot sugar syrup that sets into a crackling glaze.

  • Hawthorn berries (shanzha)300 g
  • Sugar300 g
  • Water150 ml
  • Wooden skewers6 pieces

Preparation

  1. Wash and core the hawthorn berries.

  2. Thread onto skewers.

  3. Boil sugar and water to a hard caramel.

  4. Quickly draw the skewers through the syrup.

  5. Let set on an oiled tray.
