Crispy fried Bombay duck

Bombil fry is a crisp fish dish of Mumbai's coastal cuisine, made from the soft fish Bombay duck.

The marinated fish is coated in semolina or rice flour and fried golden, so it turns crisp outside and tender within.

  • Bombay duck (bombil)500 g
  • Chili powder & turmericsome of each
  • Ginger-garlic paste1 tbsp
  • Semolina or rice flour100 g
  • Lime & saltsome of each
  • Oil for fryingplenty

Preparation

  1. Clean the fish and pat dry.

  2. Marinate with chili, turmeric, ginger-garlic and lime.

  3. Coat in semolina or rice flour.

  4. Fry crisp and golden in hot oil.

  5. Serve with lime wedges.
