Sticky rice balls in warm coconut milk

Bua loy are small glutinous rice balls floating in sweetened coconut milk, among Thailand's beloved warm desserts.

The balls are often coloured with pumpkin or pandan and sometimes served with a poached egg.

Ingredients

  • Glutinous rice flour150 g
  • Coconut milk400 ml
  • Palm sugar80 g
  • Pumpkin or pandan puree2 tbsp
  • Pinch of salt1 pinch
  • Wateras needed

Preparation

  1. Knead rice flour with puree and water into a dough.

  2. Form small balls.

  3. Cook in boiling water until they float.

  4. Warm coconut milk with palm sugar and salt.

  5. Add the balls and serve warm.
