Bubble Tea

Taiwan's milk tea with tapioca pearls

Invented in 1980s Taichung, bubble tea (boba) conquered the world from Taiwan. The trick is the chewy tapioca pearls drawn up through a wide straw.

Classic is sweetened black tea with milk; the pearls are soaked in sugar syrup. Endlessly variable – but the original is timeless.

Ingredients

  • Tapioca pearls (boba)100 g
  • Black tea2 bags
  • Milk200 ml
  • Brown sugar / syrup3 tbsp
  • Ice cubesplenty

Preparation

  1. Cook the tapioca pearls per packet (about 25–30 min), rinse.

  2. Let the pearls steep in brown sugar syrup.

  3. Brew the tea strong, sweeten and cool.

  4. Put the pearls in the glass, top with ice, tea and milk.

  5. Serve with a wide straw.
