Bulalo

Filipino beef marrow soup

Bulalo is a clear, hearty Filipino soup of beef shanks with marrow bones, simmered long until the meat falls apart.

A specialty of the Batangas and Tagaytay region, it is served with corn, cabbage and bok choy; the melted marrow is the delicacy.

Ingredients

  • Beef shanks with marrow1.2 kg
  • Corn cobs (in pieces)2 pieces
  • Cabbage & bok choysome of each
  • Onion & peppercornssome of each
  • Fish sauce2 tbsp
  • Spring onionto garnish

Preparation

  1. Blanch the beef shanks and rinse.

  2. Simmer long tender with onion and pepper, skimming.

  3. Add the corn and cook along.

  4. Season with fish sauce, briefly cook cabbage and bok choy.

  5. Serve with spring onion and rice.
