Bulgogi

Korea's sweetly marinated fire meat

“Bul” means fire, “gogi” meat. Its roots reach back to the grilling culture of ancient Goguryeo. Today bulgogi is perhaps the best-known Korean meat dish – mild, slightly sweet and accessible to all.

The secret is the marinade: soy sauce, sesame oil, garlic and – traditionally – grated pear, which tenderises the meat and lends a delicate sweetness.

Ingredients

  • Beef, thinly sliced500 g
  • Soy sauce4 tbsp
  • Sesame oil1 tbsp
  • Pear, grated1/2
  • Garlic & sugar1 tbsp each
  • Spring onions2
  • Sesameto sprinkle

Preparation

  1. Stir soy sauce, sesame oil, pear, garlic and sugar into a marinade.

  2. Marinate the thin beef in it for at least 30 min (or overnight).

  3. Sear in batches in a very hot pan.

  4. Briefly fry the spring onions with it.

  5. Sprinkle with sesame, serve with rice and lettuce for wrapping.
