Bún Chả
Grilled pork with rice noodles from Hanoi
Bún chả is Hanoi's lunch classic: charcoal-grilled pork patties and belly slices served in a warm, sweet-sour nuoc cham bowl, with rice noodles and a mound of herbs.
You dip noodles and meat into the sauce – an interactive, fresh meal. It became world-famous when Anthony Bourdain dined here with Barack Obama.

Ingredients
- Pork belly & mince400 g
- Rice noodles (bún)200 g
- Fish sauce4 tbsp
- Lime & sugar2 tbsp each
- Garlic & chillisome of each
- Carrot & daikon, pickled1 handful
- Herbs (mint, coriander)1 bunch

Preparation
Marinate the meat with fish sauce, garlic and sugar, form patties and slices.
Grill caramelised over charcoal or in a grill pan.
Mix a dip of fish sauce, lime, sugar, water, garlic and chilli.
Cook the rice noodles, prepare the pickled vegetables.
Add the meat to the warm dip; serve noodles, herbs and dip separately.
