Bun Dau Mam Tom
Rice noodles with fried tofu and shrimp paste
Bun dau mam tom is a Hanoi street dish that brings together fried tofu, rice noodles and herbs on one platter.
The namesake dip of fermented shrimp paste is whipped with lime and bold in flavour.

Ingredients
- Firm tofu400 g
- Rice vermicelli (bun)300 g
- Fermented shrimp paste (mam tom)3 tbsp
- Fresh herbs (perilla, mint)1 bunch
- Lime & sugarsome of each
- Oil for fryingenough

Preparation
Cut the tofu into cubes and fry until golden.
Cook the rice noodles and drain.
Whip the shrimp paste with lime and sugar until frothy.
Wash the herbs and set out.
Serve everything on a platter with the dip.
