Bún Ốc

Hanoi snail noodle soup

Bún ốc is a traditional Hanoi noodle soup with freshwater snails in a lightly sour tomato broth.

The sourness comes from ripe tomatoes and fermented rice vinegar (giấm bỗng); rice vermicelli and plenty of fresh herbs complete it.

Ingredients

  • Freshwater snails400 g
  • Rice vermicelli (bún)300 g
  • Ripe tomatoes3 pieces
  • Fermented rice vinegar3 tbsp
  • Fresh herbs1 bunch
  • Shrimp paste1 tsp

Preparation

  1. Cook the snails, remove from shells.

  2. Fry the tomatoes, simmer with water into a broth.

  3. Season sour with vinegar and shrimp paste.

  4. Add the snails.

  5. Pour over the noodles, serve with herbs.
