Refined Hanoi noodle soup with many toppings

Bún thang is an elegant noodle soup from Hanoi, its clear broth drawn from chicken, shrimp and dried squid.

Finely shredded chicken, egg strips and Vietnamese pork sausage are artfully arranged over the rice noodles.

Ingredients

  • Rice noodles (bún)400 g
  • Chicken300 g
  • Dried squid1 piece
  • Eggs3 pieces
  • Vietnamese pork sausage (gio lua)150 g
  • Spring onion & herbssome of each

Preparation

  1. Simmer chicken and dried squid into a clear broth.

  2. Fry the eggs thin and cut into strips.

  3. Finely shred the chicken, slice the sausage.

  4. Put rice noodles into bowls and arrange the toppings.

  5. Ladle over hot broth and serve with herbs.
