Cà Phê Sữa Đá

Vietnamese iced coffee with condensed milk

Cà phê sữa đá is the iconic Vietnamese iced coffee: strong robusta coffee dripping through a phin filter over sweetened condensed milk.

Condensed milk took hold in the colonial era when fresh milk was scarce, and it still defines the sweet-bitter character.
