Cà phê trứng, egg coffee, arose in Hanoi when milk was scarce in the 1940s and egg yolk was whipped as a substitute.

Creamily whipped egg yolk with condensed milk floats like a cap on strong black coffee.

Ingredients

  • Ground robusta coffee3 tbsp
  • Egg yolk2 pieces
  • Sweetened condensed milk3 tbsp
  • Hot water120 ml
  • Sugar1 tsp

Preparation

  1. Brew the coffee through a phin filter.

  2. Whip egg yolk with condensed milk and sugar foamy.

  3. Beat the egg foam thick.

  4. Pour coffee into cups.

  5. Top with the egg foam as a cap and serve.
