Vietnamese chicken curry

Cà ri gà is a mild, creamy chicken curry from Vietnam - shaped by Indian and French influence in southern Vietnamese cuisine.

Chicken, sweet potato and carrot simmer in coconut milk with curry powder and lemongrass; baguette is often served for dipping.

Ingredients

  • Chicken pieces800 g
  • Coconut milk400 ml
  • Sweet potato & carrot400 g
  • Curry powder2 tbsp
  • Lemongrass2 stalks
  • Shallots & garlicsome of each

Preparation

  1. Marinate the chicken with curry powder.

  2. Fry shallots, garlic and lemongrass.

  3. Sear the chicken, pour in water and coconut milk.

  4. Add sweet potato and carrot, simmer tender.

  5. Serve with baguette or rice.
