Ca tim nuong is grilled eggplant, a simple and beloved Vietnamese dish.

The smoky soft eggplant is served with fragrant scallion oil and a tangy fish sauce.

Ingredients

  • Asian eggplants4
  • Spring onions3
  • Fish sauce2 tbsp
  • Lime & chilisome of each
  • Garlic & sugarsome of each
  • Roasted peanuts2 tbsp

Preparation

  1. Cook the eggplants over open flame or on the grill.

  2. Peel off the skin and arrange the soft flesh.

  3. Turn spring onion into scallion oil in hot oil.

  4. Stir a dip of fish sauce, lime, garlic and chili.

  5. Serve the eggplant with scallion oil, dip and peanuts.
