Clear winter melon soup with pork

Canh bi dao is a light Vietnamese soup of winter melon and lean pork.

As a cooling side to a family meal, it is regarded as soothing on hot days.

  • Winter melon500 g
  • Lean minced pork150 g
  • Fish sauce1 tbsp
  • Spring onion & coriandersome of each
  • Shallot1
  • Water or broth1 l

Preparation

  1. Peel the winter melon and dice.

  2. Fry the shallot and add the pork.

  3. Pour in water or broth.

  4. Add winter melon and simmer soft.

  5. Season with fish sauce and add herbs.
