Stuffed bitter melon in clear broth

Canh kho qua is a Vietnamese soup of bitter melon stuffed with minced pork.

Eaten at the new year, the name is said to symbolise the passing of the old year's troubles.

Ingredients

  • Bitter melon3
  • Minced pork250 g
  • Glass noodles & wood earsome of each
  • Fish sauce1 tbsp
  • Spring onion & coriandersome of each
  • Pork broth1.2 l

Preparation

  1. Halve the bitter melon and remove the seeds.

  2. Mix pork with glass noodles, wood ear and seasonings.

  3. Stuff the bitter melon with the filling.

  4. Poach gently in pork broth.

  5. Serve with spring onion and coriander.
