Hanoi turmeric fish with dill

Chả cá lã vọng is a famous Hanoi specialty: fish marinated in turmeric and galangal, fried at the table in a pan with lots of dill and spring onions.

It is served with rice vermicelli, peanuts and the fermented shrimp paste mắm tôm - a feast of flavours.

Ingredients

  • Firm fish fillet500 g
  • Turmeric & galangalsome of each
  • Dill1 bunch
  • Spring onion1 bunch
  • Rice vermicelli & peanutssome of each
  • Mắm tôm (shrimp paste)to serve

Preparation

  1. Marinate the fish with turmeric and galangal.

  2. Sear in a hot pan.

  3. Add plenty of dill and spring onion, fry briefly.

  4. Plate with rice vermicelli and peanuts.

  5. Serve with mắm tôm.
