Hanoi turmeric fish with dill
Chả cá lã vọng is a famous Hanoi specialty: fish marinated in turmeric and galangal, fried at the table in a pan with lots of dill and spring onions.
It is served with rice vermicelli, peanuts and the fermented shrimp paste mắm tôm - a feast of flavours.

Preparation
Marinate the fish with turmeric and galangal.
Sear in a hot pan.
Add plenty of dill and spring onion, fry briefly.
Plate with rice vermicelli and peanuts.
Serve with mắm tôm.
