Vietnamese steamed pork sausage

Cha lua is a smooth Vietnamese steamed sausage of finely pureed pork, traditionally wrapped in banana leaves.

It is sliced thinly and belongs to banh mi, rice dishes and festive tables.

Ingredients

  • Lean pork500 g
  • Fish sauce2 tbsp
  • Baking powder1 tsp
  • Ice water4 tbsp
  • Banana leavesseveral
  • Sugar & white peppersome of each

Preparation

  1. Puree the ice-cold pork finely with fish sauce and baking powder.

  2. Beat with ice water into a smooth paste.

  3. Wrap tightly into a roll in banana leaves.

  4. Steam for about 45 minutes.

  5. Let cool and slice.
