Cháo lòng is a hearty Vietnamese rice porridge served with boiled pork offal and blood cake.

The long-simmered rice softens in rich pork broth and is seasoned with ginger, herbs and spring onion.

  • Rice150 g
  • Pork broth1.5 l
  • Pork offal300 g
  • Blood cake150 g
  • Ginger & spring onionsome of each

Preparation

  1. Simmer the rice soft in the pork broth.

  2. Cook the offal separately and slice it.

  3. Warm the blood cake.

  4. Season the porridge with ginger and fish sauce.

  5. Serve with offal, herbs and lime.
