Chao Shou

Sichuan wontons in spicy chili oil

Chao shou are the wontons of Sichuan, whose name means crossed arms, after their folding shape.

They swim in a spicy sauce of chili oil, soy sauce and garlic, going by the name hong you chao shou.

Ingredients

  • Wonton wrappers30
  • Minced pork250 g
  • Chili oil4 tbsp
  • Soy sauce & black vinegarsome of each
  • Garlic & gingersome of each
  • Spring onion2

Preparation

  1. Season the pork with ginger and a little soy sauce.

  2. Fill the wrappers and fold into wontons.

  3. Cook in boiling water until they float.

  4. Stir a sauce of chili oil, soy sauce, vinegar and garlic.

  5. Toss the wontons in it and serve with spring onion.
