Shrimp paste on sugarcane from Hue

Chạo tôm is a specialty of Hue in which seasoned shrimp paste is moulded around a piece of sugarcane and grilled.

The sugarcane perfumes the shrimp from within; it is served with rice paper, herbs and a dip.

Ingredients

  • Shrimp400 g
  • Sugarcane pieces8 pieces
  • Garlic & shallotssome of each
  • Fish sauce & sugarsome of each
  • Rice paper & herbssome of each
  • Starch & peppersome of each

Preparation

  1. Puree the shrimp with garlic, fish sauce and starch into a paste.

  2. Mould the paste firmly around the sugarcane pieces.

  3. Cook over charcoal or in the grill.

  4. Set out rice paper and herbs.

  5. Serve wrapped in rice paper with a dip.
