Shrimp paste on sugarcane from Hue
Chạo tôm is a specialty of Hue in which seasoned shrimp paste is moulded around a piece of sugarcane and grilled.
The sugarcane perfumes the shrimp from within; it is served with rice paper, herbs and a dip.

- Shrimp400 g
- Sugarcane pieces8 pieces
- Garlic & shallotssome of each
- Fish sauce & sugarsome of each
- Rice paper & herbssome of each
- Starch & peppersome of each

Preparation
Puree the shrimp with garlic, fish sauce and starch into a paste.
Mould the paste firmly around the sugarcane pieces.
Cook over charcoal or in the grill.
Set out rice paper and herbs.
Serve wrapped in rice paper with a dip.
