Sweet soup with pomelo and mung beans
Chè bưởi is a Vietnamese dessert that uses the white pith of the pomelo, which gains a crunchy texture when coated in starch.
With yellow mung beans, sugar and coconut milk it becomes a sweet, slightly bitter soup with a surprising bite.

- White pomelo pith200 g
- Yellow mung beans150 g
- Tapioca starch60 g
- Sugar150 g
- Coconut milk200 ml
- Pandan & saltsome of each

Preparation
De-bitter the pomelo pith, dice and coat in starch.
Boil in water until translucent.
Cook the mung beans soft.
Bind with sugar and pandan into a sweet soup.
Serve drizzled with salted coconut milk.
