Sweet soup with pomelo and mung beans

Chè bưởi is a Vietnamese dessert that uses the white pith of the pomelo, which gains a crunchy texture when coated in starch.

With yellow mung beans, sugar and coconut milk it becomes a sweet, slightly bitter soup with a surprising bite.

Ingredients

  • White pomelo pith200 g
  • Yellow mung beans150 g
  • Tapioca starch60 g
  • Sugar150 g
  • Coconut milk200 ml
  • Pandan & saltsome of each

Preparation

  1. De-bitter the pomelo pith, dice and coat in starch.

  2. Boil in water until translucent.

  3. Cook the mung beans soft.

  4. Bind with sugar and pandan into a sweet soup.

  5. Serve drizzled with salted coconut milk.
