Vietnamese banana coconut pudding

Chè chuối is a warm Vietnamese sweet of bananas in coconut milk - a popular street dessert.

Ripe bananas are simmered creamy in sweetened coconut milk with tapioca pearls and scattered with roasted peanuts.

Ingredients

  • Ripe bananas4 pieces
  • Coconut milk400 ml
  • Tapioca pearls50 g
  • Sugar3 tbsp
  • Roasted peanuts2 tbsp
  • Pinch of salt1 pinch

Preparation

  1. Cook the tapioca pearls in water until translucent.

  2. Heat coconut milk with sugar and salt.

  3. Add the banana pieces and simmer gently.

  4. Stir in the tapioca until creamy.

  5. Serve scattered with roasted peanuts.
