Chicken Cafreal

Goan chicken in green spice paste

Chicken cafreal is a Goan dish with Portuguese-African roots, its name tracing back to the cooking of the Caffres.

A green paste of coriander, mint and spices marinates the chicken, which is then fried juicy.

Ingredients

  • Chicken pieces800 g
  • Coriander & mint1 bunch
  • Green chilies & garlicsome of each
  • Spices (cinnamon, cloves, cumin)some of each
  • Vinegar2 tbsp
  • Oil3 tbsp

Preparation

  1. Grind herbs, chilies, garlic and spices into a green paste.

  2. Marinate the chicken with the paste and vinegar.

  3. Let it rest at least an hour.

  4. Sear all over in oil.

  5. Finish juicy with a little water.
