Chicken Cafreal
Goan chicken in green spice paste
Chicken cafreal is a Goan dish with Portuguese-African roots, its name tracing back to the cooking of the Caffres.
A green paste of coriander, mint and spices marinates the chicken, which is then fried juicy.

- Chicken pieces800 g
- Coriander & mint1 bunch
- Green chilies & garlicsome of each
- Spices (cinnamon, cloves, cumin)some of each
- Vinegar2 tbsp
- Oil3 tbsp

Preparation
Grind herbs, chilies, garlic and spices into a green paste.
Marinate the chicken with the paste and vinegar.
Let it rest at least an hour.
Sear all over in oil.
Finish juicy with a little water.
