Filipino stuffed roast chicken

Rellenong manok is a festive Filipino dish where a deboned chicken is stuffed with a meat filling.

The filling of minced pork, sausage, eggs and vegetables shows a colourful pattern when sliced.

Ingredients

  • Deboned chicken1 whole
  • Minced pork400 g
  • Chorizo or sausage100 g
  • Hard-boiled eggs3
  • Carrot, pepper & raisinssome of each
  • Eggs & spicessome of each

Preparation

  1. Carefully debone the chicken.

  2. Mix the pork with sausage, vegetables and eggs.

  3. Stuff the chicken with the mixture and eggs.

  4. Sew shut and roast slowly in the oven.

  5. Let cool and serve in slices.
