Chikuzenni

Simmered chicken with root vegetables

Chikuzenni comes from the Chikuzen region (today Fukuoka) and is a simmered dish of chicken and root vegetables.

Lotus root, carrot, taro and shiitake simmer with chicken in a sweet soy broth - a fixture of festive New Year tables.

Ingredients

  • Chicken thigh (cubed)400 g
  • Lotus root & carrot300 g
  • Shiitake6 pieces
  • Soy sauce3 tbsp
  • Mirin & sake2 tbsp each
  • Dashi300 ml

Preparation

  1. Cut the vegetables into bite-sized pieces.

  2. Briefly sear the chicken.

  3. Add the vegetables and fry along.

  4. Pour in dashi, soy sauce, mirin and sake.

  5. Simmer covered until the liquid is nearly reduced.
