Thick red coconut curry with fish

Choo chee is a thick Thai curry whose name describes the sizzle when the curry paste hits hot coconut oil.

The reduced, intense sauce of red curry paste and coconut milk pairs especially well with fish and prawns.

Ingredients

  • Fish fillet or prawns400 g
  • Red curry paste2 tbsp
  • Coconut milk300 ml
  • Kaffir lime leaves4 pieces
  • Fish sauce & palm sugarsome of each
  • Red chili & Thai basilsome of each

Preparation

  1. Fry the thick coconut cream with the curry paste.

  2. Pour in the rest of the coconut milk and reduce.

  3. Season with fish sauce and palm sugar.

  4. Cook the fish or prawns in the sauce.

  5. Serve with lime leaves and basil.
