Korean loach soup

Chueotang is a hearty Korean soup made from the freshwater loach fish, traditionally prized as a nourishing tonic dish.

The fish is boiled, pressed through a sieve and worked with doenjang and vegetables into a thick, savoury broth.

Ingredients

  • Loach (or freshwater fish)500 g
  • Doenjang3 tbsp
  • Napa cabbage & bean sprouts300 g
  • Gochugaru1 tbsp
  • Garlic & spring onionsome of each
  • Sancho pepper1 pinch

Preparation

  1. Boil the fish soft and press it through a sieve.

  2. Season the fish broth with doenjang.

  3. Add cabbage and bean sprouts and cook.

  4. Add gochugaru and garlic.

  5. Serve with spring onion and sancho pepper.
