Broken rice with lemongrass pork chop
Cơm tấm – “broken rice” – comes from Saigon and was originally the food of poor farmers who used up broken rice grains. Today it is one of southern Vietnam's most beloved dishes.
The rice is crowned with a grilled pork chop marinated in lemongrass and fish sauce, plus pickled vegetables, cucumber and nuoc cham.

Ingredients
- Broken or jasmine rice300 g
- Pork chops2
- Lemongrass2 stalks
- Fish sauce & sugar2 tbsp each
- Garlic & shallots2 each
- Cucumber & pickled carrot1 handful
- Nuoc chamto serve

Preparation
Marinate the chops with chopped lemongrass, fish sauce, sugar and garlic.
Cook the rice.
Grill the chops caramelised over charcoal or in a grill pan.
Mix nuoc cham from fish sauce, lime, sugar, water and garlic.
Plate rice with chop, cucumber and pickled vegetables, drizzle nuoc cham.
