Cong You Ji
Poached chicken with scallion oil
Cong you ji is a Cantonese dish of tenderly poached chicken doused in fragrant scallion oil.
The hot oil wakes the aromas of spring onion and ginger, making the plain chicken especially flavourful.

Ingredients
- Whole chicken or thighs1 kg
- Spring onions1 bunch
- Ginger1 piece
- Peanut oil5 tbsp
- Salt & soy saucesome of each
- Rice wine1 tbsp

Preparation
Poach the chicken just below boiling.
Shock in ice water and cut into pieces.
Finely chop spring onion and ginger.
Heat the oil and pour over the mixture.
Spoon the scallion oil over the chicken and serve.
