Malay crispy prawn fritters
Cucur udang are Malay prawn fritters in which whole prawns are fried in a spiced batter.
Crisp and golden, they are served as a snack or with tea alongside a spicy chili sauce.

- Prawns200 g
- Wheat flour150 g
- Bean sprouts & chivessome of each
- Turmeric & baking powdersome of each
- Water & saltas needed
- Oil for fryingplenty

Preparation
Whisk flour with turmeric, baking powder, water and salt into a batter.
Mix in bean sprouts and chives.
Spoon the batter into hot oil in portions.
Press a prawn onto each fritter.
Fry crisp and golden, serve with chili sauce.
