Malay crispy prawn fritters

Cucur udang are Malay prawn fritters in which whole prawns are fried in a spiced batter.

Crisp and golden, they are served as a snack or with tea alongside a spicy chili sauce.

  • Prawns200 g
  • Wheat flour150 g
  • Bean sprouts & chivessome of each
  • Turmeric & baking powdersome of each
  • Water & saltas needed
  • Oil for fryingplenty

Preparation

  1. Whisk flour with turmeric, baking powder, water and salt into a batter.

  2. Mix in bean sprouts and chives.

  3. Spoon the batter into hot oil in portions.

  4. Press a prawn onto each fritter.

  5. Fry crisp and golden, serve with chili sauce.
