Thick udon in curry broth
Curry udon marries Japanese curry with the dashi of udon soup into a silky, gently spicy broth.
The dish appeared when soba and udon shops responded to the popularity of curry adopted from England.

- Udon noodles300 g
- Dashi broth600 ml
- Japanese curry roux2 cubes
- Thin beef200 g
- Onion1 piece
- Spring onion1 stalk

Preparation
Simmer onion and beef in dashi.
Stir in the curry roux until the broth thickens.
Cook the udon separately and drain.
Add the noodles to the curry broth.
Serve scattered with spring onion.
