Green pancake rolls with coconut filling

Dadar gulung are Indonesian pancake rolls that get their green colour and aroma from pandan leaf.

They are filled with grated coconut caramelised in palm sugar.

Ingredients

  • Flour150 g
  • Pandan extract1 tsp
  • Grated coconut150 g
  • Palm sugar (gula melaka)100 g
  • Coconut milk250 ml
  • Pinch of salt1 pinch

Preparation

  1. Caramelise grated coconut with palm sugar.

  2. Stir a batter of flour, coconut milk and pandan.

  3. Cook thin green pancakes.

  4. Top with the coconut filling.

  5. Roll up tightly and serve.
