Candied sweet potato with sesame

Daigaku imo, literally university potato, is a Japanese snack of fried sweet potato in a glossy sugar glaze.

The name comes from the Taisho era, when students in Tokyo especially loved the cheap, sweet treat.

Ingredients

  • Sweet potato500 g
  • Sugar80 g
  • Soy sauce1 tsp
  • Black sesame1 tbsp
  • Oil for fryingplenty
  • Watersome

Preparation

  1. Cut the sweet potato into bite-size wedges.

  2. Fry golden and cooked through in oil.

  3. Cook sugar with water and soy sauce into a syrup.

  4. Toss the sweet potato in the syrup until glossy.

  5. Scatter with black sesame and let cool.
