Whole chicken in a pot from Seoul

Dak hanmari literally means one whole chicken and comes from the area around Dongdaemun market in Seoul.

A whole chicken is cooked with garlic and leek in clear broth and eaten at the table with rice-cake pieces and a spicy dipping sauce.

Ingredients

  • Whole chicken1.2 kg
  • Garlic1 bulb
  • Leek & onionsome of each
  • Tteok (rice cake)200 g
  • Soy sauce & mustardsome of each
  • Gochugaru & vinegarsome of each

Preparation

  1. Start the chicken with garlic and onion in water.

  2. Simmer long into a clear, rich broth.

  3. Add leek and rice cakes.

  4. Stir a dip of soy sauce, mustard, gochugaru and vinegar.

  5. Joint the chicken at the table and eat with the dip.
