Knife-shaved noodles from Shanxi

Dao xiao mian are "knife-shaved noodles" from Shanxi province: the dough is shaved straight into boiling water with a blade.

This makes irregular noodles, thicker in the middle with a chewy core, served in a savoury broth with braised beef.

Ingredients

  • Flour (firm dough)300 g
  • Beef (braised)250 g
  • Soy sauce2 tbsp
  • Star anise & cinnamonsome of each
  • Bok choy100 g
  • Spring onion2 stalks

Preparation

  1. Knead flour with a little water into a firm dough, rest.

  2. Braise the beef tender with spices and soy sauce.

  3. Shave the dough into thin slivers into boiling water with a blade.

  4. Cook the noodles, scoop out.

  5. Serve with broth, beef and bok choy.
