Dao Xiao Mian
Knife-shaved noodles from Shanxi
Dao xiao mian are "knife-shaved noodles" from Shanxi province: the dough is shaved straight into boiling water with a blade.
This makes irregular noodles, thicker in the middle with a chewy core, served in a savoury broth with braised beef.

- Flour (firm dough)300 g
- Beef (braised)250 g
- Soy sauce2 tbsp
- Star anise & cinnamonsome of each
- Bok choy100 g
- Spring onion2 stalks

Preparation
Knead flour with a little water into a firm dough, rest.
Braise the beef tender with spices and soy sauce.
Shave the dough into thin slivers into boiling water with a blade.
Cook the noodles, scoop out.
Serve with broth, beef and bok choy.
