Dinuguan

Filipino pork stew in blood sauce

Dinuguan is a hearty Filipino stew of pork in a dark sauce of pig's blood and vinegar.

The tang of vinegar and the heat of long chilies balance the rich dish.

Ingredients

  • Pork600 g
  • Pig's blood300 ml
  • Vinegar4 tbsp
  • Garlic & onionsome of each
  • Long green chilies3
  • Bay leaf & fish saucesome of each

Preparation

  1. Sear the pork with garlic and onion.

  2. Braise soft with water.

  3. Add vinegar and briefly do not stir.

  4. Stir in the blood and thicken gently.

  5. Season with chilies and fish sauce.
