Dong An Chicken

Hunan chicken with vinegar and chili

Dong an ji is a classic dish from Hunan province, named after Dong'an county and passed down for over a thousand years.

Cooked chicken is stir-fried with rice vinegar, dried chilies and Sichuan pepper, making it sour-spicy yet aromatic.

Ingredients

  • Chicken600 g
  • Rice vinegar3 tbsp
  • Dried chilies6 pieces
  • Sichuan pepper1 tsp
  • Ginger & spring onionsome of each
  • Cornstarch & brothsome of each

Preparation

  1. Pre-cook the chicken and cut into strips.

  2. Fry chilies, Sichuan pepper and ginger in oil.

  3. Add the chicken and sear hard.

  4. Deglaze with vinegar and broth.

  5. Thicken with starch, add spring onion, serve.
